Not like home-made or commercial usage, there are kinds of different cooking details, but for factory scale, there are two kinds of bread crumbs. One is Fermentation/Panko Bread Crumbs which made from fermented dough, the other one is extruded bread crumbs which made from extruded flour , As they all have advantage & disadvantages, so they are suitable for different customers, let’s see what’s the similarities and difference for them.

From the appearance, both Fermented/Panko Bread Crumbs & Extruded Bread Crumbs all can do the similar, so most of customer can’t distinguish by eyes.

1.      They all can have needle shape or granule shape, different shape is adjusted by different recipe & working parameters.

2.      They all can make different sizes by different sieves, like 2mm, 4mm, 6mm, 8mm or any specific size.

3.      They all can make different color, like white color, golden color with color additive.

So if only from the appearance, most of people can’t see the difference.

1.      From their recipe, Fermented/Panko Bread Crumbs is very simple, just flour, salt, & yeast, nature & simple. For extruded bread crumbs, because of its process, it can be mixture of kind of raw material, such as high protein flour, corn, also some factory will add some rice flour and other additives to help improve flavor etc.

3.    What's their advantages & disadvantages? 

 a.  From the taste, Fermented/Panko Bread Crumbs has the nature flour flavor, smells better, after frying, it’s crispy, and with absorbing less oil, so it's one kind of more healthier bread crumbs, like big brand bread crumbs company on the market, most of sell fermented/ panko bread crumbs. 

 b. Extruded bread crumbs because it’s expanded by extrusion technology before, it can absorb more oil, after frying, it’s kind of crispy hard. But extruded bread crumbs recipe can be more flexible, invest less, more suitable for small capacity & limit budgets factory.
